ThaiEyeBalls

~1 cup chopped pickled radish (1/3 volume of pork)
2-3 cup ground pork
3-4 Tbsp garlic
0.25-0.5 cup dried onion flakes
3/4 cup brown sugar
1 Tbsp salt
black pepper
3-4 cilantro roots, minced
5 heaping Tbsp crushed peanuts
Small Tapioca beads


Simmer ground pork and garlic in oil and water, then add brown sugar, salt, black
pepper; then the onion and radish.  When sticky add ground peanut.

Thoroughly mix in other ingredients and cool.  Mix
the tapioca beads and some warm water to make a gelatinous mess.

Make a 3/4" ball of the sweet pork mix.  Take a small piece of the
tapioca gel, flatten, and wrap around the sweet pork ball.


after balls are formed poach until they float, coat with garlic oil.

These are best eaten whole with a piece of birds eye chili and small
leaf of crunchy lettuce.
