PickledMushrooms

when the bounty of the woods is more than we can eat i like to put mushrooms up for later. Much of the flavor of the mushroom is lost but the marinade and texture make this enjoyable.

process

Pickling Brine
  • 0.75cup white vinegar
  • 1.5cup water
  • 0.5cup white sugar
  • 4tsp canning salt

  1. boil mushrooms in brine for 10min
  2. remove and strain
  3. pack into jars with herbs (fennel, thyme, bay leaves, pepper, chilis)
  4. fill with 1/3 pickling brine, 2/3 olive oil
  5. Store in refrigerator
