Texas Okra

I had this at Blue Ribbon BBQ in Lexington, MA - outstanding

  • cut okra into 1/2" chunks
  • corn
  • minced onion and garlic
  • crushed tomatos
  • salt

Mix it all up and stew until you think its done. The dish had a similar texture and wetness of fresh salsa. Its nothing like salsa but that is the best guide I can give you for how to make it.

Okra Curry

I made this up but it was similar to a dish I had somewhere.

  • Baked potato cut into 1" chunks
  • Peas
  • Onion
  • Okra cut in 1/2" chunks
  • Garlic

Sautee with your choice of spices (coriander, cumin, turmeric, fenugreek, ginger). Add in some sour cream and cook for another couple minutes before removing from heat. Cook until okra is tender. This is a quick dish because the potato is cooked ahead of time (microwave is a good place to cook potatos).

Pickled Okra

I saw these made on Good Eats and they look great. Here is the link to all of the recipes from that episode.

Update: I made these, the are great. They produce a slightly unsettling vinegar slime but the okra itself was crisp and fresh. I winged the spices but it was typical pickling stuff with the addition of cumin. I used a 2/3 vinegar 1/3 water solution.
