Not really a novel thing to make or tell the world about so I'm not going to put much effort into this page. Its more for my reference later.

Recipe

  • Babbo recipe, cured 7 days
  • Hung inside a pot with cracked lid in the fridge to keep the humidity closer to 50%

Done

I should have left it hanging a bit longer and cure a bit longer. Next time... This picture has some blood stained skin/fat showing. Deeper into the jowl was silky smooth fat with veins of muscle running through it.
