Marinate the Beets

Thinly peel a raw beet and slice into thin slices (up to 40 slices per beet). Marinate the beet slices with olive oil, salt and:
  • garlic and vinegar
  • lemon and ginger
  • Lemon juice and spring onions

Uses for Marinated Beets

Use the marinated beets as a bed for grilled/poached salmon, roast vegetables, poached eggs. They also go well in salads (perhaps using the very greens from the beets you marinated)

Roasted Beets

At our Christmas party at the Seaport Hotel I had a roast vegetable dinner that was fantastic.

Roast 3 thick slices each (1/3" thick or so) of sweet potato and beet, and some asparagus. The sauce was some sort of thinned vegetable puree.

I just made this by adding 1 sliced beet, 1 sliced potato, 1/2 sliced sweet potato in a oven dish. Spice with rosemary, parsley, salt and pepper. Add 1cup wine and bake for like 40min at 375F or so.
