Simmering longer takes the syrup from golden to deep red. This is belgian candi.

Recipe

* 4 cups sugar
* 1 Tbs lemon juice
* 1.5 cup water

Procedure

Simmer for 15 min stirring occasionally. Get out of hot pan asap because heat causes sugar to continue inverting.

It turns clear to yellow to ruby pretty quickly. Keep an eye on it. Water may need slight adjustment. Cool small samples to test viscosity.
