recipe calls for 3lb but only have 1.5lb so there you go. This makes a dry table wine served at cellar temp like dry red grape table wine.

Recipe
* 1.5lb frozen stramberries* 3lb raw honey (jim williams, apex, nc)
* 3qt water
Procedure
* Boil water* add frozen strawberries and honey
* pitch when cool and ferment 10days
* strain fruit pulp and rack to 2ndary
* wait at least 3mon bottle

pitched 71B yeast.
Note: based on this gravity i don't think it was really 3qt water and 3lb honey. I would bet it was like 2lb12oz honey (based on similar jars) and a bit more than a gallon of must (sans strawberries).

racked to 2ndary, strained fruit with washed hand. ~pint head space in gallon jug.

racked to clean fermenter to get mead away from strawberry chunks on side of glass. Purged head space with CO2.
Driving factor is fear of mold. Didn't have enough for SG reading but took a sip which was dry and pleasant. This will be a good table wine.
