Spent Grain 'Falafel'

Note:
Spent Grain is comprised of cellulose and hemicellulose 65.6% (by weight), lignin 5.2%, pectin 2.2%, protein 10.9% and lipid 8.0%. Since it contains a lot of fiber and protein but is devoid of calories (they went into the beer) its a perfect dietary additive esp for the western diet.
Sadly the grain has sharp hulls and no cohesive strength so it tends to make things fall apart. For this reason its a poor additive to bread in any quantity but then how much fiber does when need?

Recipe
~3cup Spent Grain paste (run thru meat grinder)~1cup oats
~1cup breadcrumbs
3 eggs
1 sauteed onion, 1-4 cloves garlic
spices (appropriate to the flavor you want)
splash of olive oil or similar (not needed if frying)
Procedure
The oats and breadcrumbs absorb some of the moisture from the grain as well as provide some stickiness. The eggs also help hold the lot of it together. Makes a wet sticky "batter" which is best fried as thin fritters. Would make good veggie burgers too - form smallish thin patties and broil for a few minutes per side to remove some moisture and help the patty set up enough to hold together on a grill.| Data Points [ + ] |
