Making for my birthday. Ended up with Fuggles pellets for the earthy/woody tones. Mostly an aroma hop, we'll see how that goes. Dizo recommends not using scotch yeast, american ale ok.

Mash:
messed up mash volume 8pt instead of 8qt, took 20+min correct, very inconsistent mash temp readings, eventually settled on ~154F. Mash for 1:30 after that point Sparge: 2gal @ 180F, 10 min rest. Made nice filter and re-poured all wort thru + 1/2 clean water post wort Boil: forgot the irish moss, should be fine due to age. 3hr total. added hops with 1hr to go and consolidated wort into single boiler. Color is vinous, mahogany Ferment: Approx 2.5gal (leaving 0.5gal for xfer waste) Estimated IBU: 40 (if fuggle 4.5%), 35 (if fuggle 4.0%)

excellent taste even thru the dreggs. Maybe nutty, nice deep and rich. Already close to target gravity and yeast is fairly inactive
