Recipe

* 7lb Maris Otter
* 3lb Munich
* 2oz Black Patent
* 4oz Cara Pils (on hand)
* 8oz Chocolate malt
* 0.5oz Nugget (13.7AA)@60min
* 0.5oz Glacier (7.4AA)@15min
* 1/2tsp irish moss@15min
* Entire yeast cake from 'carrot sticke' primary

Probably something like mash 12qt => 154F, sparge 4gal@170F, top off with tap water.

12qt@[172F => 154F] for 70min** Recalibrated therm, actual mash temp 158F, initial water probably 176F

Rough Calc Efficiency: ~80%, not too bad

Sparge:
- 16qt@170F w/10min rest
- collected ~6gal wort

Boil: 1hr follow hop schedule. No water added post boil, final volume is what it is

Ferment: pitched around 1:30p. Activity started almost immediately, very vigorous after a few hours

9am: vigorous ferment is largely over. Instead of constant stream of CO2 its down to a bubble every 3-5s. Possibly the fastest ferment I've had.

Due to high etoh acclimated yeast moved from cold to warm? This yeast was used to ferment a 1.060 altbier at ~50F, then moved to this porter ~68F. Also used entire yeast cake (3x my normal pitch). Should have high ester, may need time to age out fusels?

Racked to 2ndary. Volume low to fill up 5g carboy but expected that.

Taste is bitter, dried fruit?, dryish finish, low etoh bite for 5.7%abv

hop seeds floating on top are potentially growing mold - hard to tell. not excited to put mold into a keg.

Taste: still etoh, slight bitter aftertaste, baseball glove?, dried dark fruit, no real off taste from mold if present.

Need to hang out with bjcp judges, this taste is totally different but i can't quantify it.

drank multiple times by multiple people with no report of off taste. If mold was present it was at least neutral, starting to doubt my eyes tho. The mold that grew on the mulberry wheat was undeniable so I'm thinking they were just deceiving bubbles.
