Note: 
Berries are a mix of dark purple and lighter purple varieties. I like the lighter purple berries better but wanted a good mix. The dark berries seem to have more tartness.

I wish I used 3-4lb/gal instead of 2.67. Originally making 2gal but bumped up to 3.5 last minute to 2ndary in 3gal carboy. Next year...

Recipe

* 8lb mulberries, rinsed, assorted ripeness
* 7lb wildflower honey (Winston-Salem, 8lb would have been better)
* 1 tsp yeast nutrient (optional)
* 71B yeast
* water to 3.5gal

Procedure

* Mix it all in a bucket, pitch yeast
* Ferment 7 days
* Strain solids, rack to 3gal carboy
* Leave in 2ndary until clear
* Bottle and cellar for 40yrs

xfer to 2ndary to clarify. may rack to three 1gal jugs to experiment with spicing. Not enough mead to take a gravity but tasted quite dry. Still fermenting fairly strong.
