Recipe

* 1.5 gal water
* 2 qt honey + 1 pint
* 7lb crushed fresh figs
* Bavarian Wheat blend yeast
* X charred oak chips

Procedure

* Combine crushed fruit, water, 2qt honey
* Stir aggressively to dissolve and aerate
* Pitch yeast
* Ferment 7 days
* Strain fruit, rack to 2ndary
* Add 1 pint honey
* Allow to fully ferment
* Add charred oak chips for 2wks

SG is approx. Honey seems darker and stronger flavored than usual - hope it plays well. Honey is harris teeter raw wildflower USA/Argentina blend.

Think I made 2 critical mistakes in this batch. 1st the honey is dark and not that great, tastes like it has molasses in it. 2nd underpitched on old fruit and ferment took a while to really get going. Seems to be some acetobacter contamination which totally ruined this batch.
