Trying Method #2 to end with a medium sweet wine around 1.030 instead of brandywine at 1.060.
Would like to try Red Star Pasteur Red yeast - good fit for elderberry. Started 7/26/2010

Recipe
3.5lb elderberry3lb sugar
7 pints water
EC-1118 Wine Yeast
Procedure
Crush 3lb elderberries, add 1qt of cooled boiled water to berries (150F=>110F)Boil 1/2gal and 1/3 of sugar and to bucket
Ferment 10 days
Strain and Rack, add (boiled) 1/3 sugar in 1 cup water
Ferment 14 days
Rack, add (boiled) 1/3 sugar in 1 cup water
Ferment to completion and bottle.

note:
strained berries, added 1cup water+1lb sugar but not all of syrup fit (maybe 1.5oz short). Decanted 2.5 oz off top and added rest of syrup.
Finally learned that mineral oil, evil crap that it is, will remove the eldergunk. Taste is tart, dry, doesn't feel very alcoholic.

Has an aroma of raw elderberries and may have a slight vinegar taste or just raw elderberry. The berries were a bit too ripe. Taste is still nice and likely to age well.
