* Protein Rest: 2gal@136F =>122F for 30min
* Sacc Rest: 2.75gal@180F =>152F for 30min

Sparge:
* 2.75gal@170F for 5min, run off

Ferment: low 60s ideally

First taste seems sour, maybe just needs some time. Seems to have some sulfur-esque aroma. Noticed ring around the 2L cask, possibly infection. I could just be worrying about nothing - tastes could be from excessive yeast in 1st pint.

Taste is fine, you worry too much. Perhaps more wheat character would be nice. Something like:
