Recipe

7lb Munich (15.0 SRM) (37 PSG)
7lb Pils (3.0 SRM) (37 PSG)
4oz CaraPils (on hand)
2oz Black Patent (500.0 SRM) (25 PSG)
4lb carrots juiced
1.5oz US Spalt [7.4%] (60 min)
1oz German Spalt [2%] (10 min)
0.25 tsp Irish Moss
1L starter English Ale yeast (its on hand)

Procedure

Mash: 60min@154F (should bump to 90min and down to 150F for better conversion)
Heat 4gal@174F

Sparge: 4gal@170F w/10min rest

Boil: 2hr
- Follow hop schedule
- Add irish moss@20min

2ndary:
- Pasteurize carrot juice for 30min@170F
- Add cooled juice to fermentor, rack beer on top

Strike water 4 gal@175F => 154F mash for 1hr
1st runnings 2.5gal
6.5 gal boil for 2hr => 4.75 gal + 0.25gal tap water

Use wort chiller to reduce temp to 72F. Decanted 1200mL American Ale X1 yeast starter, pitched slurry. Moved fermenter outside shed@50F

weather is cooperating a bit too well. Ambient temperature in shed has been about 45F for last 2 days. I am regularly spinning the fermenter to stir up the yeast.

Bottled. Bottling sucks. Disappointed FG is so high. Very pronounced carrot juice flavor. 5% abv is hardly a sticke but low abv is due to high mash temp (uncalibrated therm) and poor efficiency (too short mash). Close enough for first go.

tasted many times and with diminishing carrot flavor. Adding juice to 2ndary is not the way to get the flavor to persist. This tasting had virtually no carrot flavor but did have a fruity estery feel.
