* 4lb+few oz frozen Lyon's Farm blackberries* 3lb Wildflower honey
* Juniper Mead yeast cake
* ~3qt water
Procedure
Mix honey and water, bring to 1galAdd frozen berries and yeast**
**Berries should be thawed to room temp first

Likely due to adding frozen fruit the ferment never started. Some mold present on whole fruit - manually crushed berries to pulp after removing moldy berries (mold certainly still present but hopefully managed by fermentation). Pitched some EC-1118 and ferment started almost immediately.

dry, tart, hot etoh. Good balance of tart fruit and honey. Very nice actually but would like to learn to take the tart edge off. Perhaps more tannin?
broke the hydrometer so no idea but got to be close to 1.0
